Not Yo’ Mama’s Coconut Macaroons


 

 

This is an age old recipe updated with a chocolate drizzle or dipping. 100 years ago, these chewy cookies were a big hit in Paris and are still popular today. Bring them to your kitchen in minutes. They will fill your home with a wonderful aroma that will make your mouth water!

Ingredients:

* 2 2/3 c coconut
* 2/3 c sugar or Splenda
* 1/3 c flour
* 1/4 tsp salt
* 3 egg whites
* 1/2 tsp vanilla or 1/4 tsp almond extract
* 1 tsp shortening
* 4 oz chocolate chips

Procedure:
1. Grease and flour a large cookie sheet or line it with parchament paper.
2. Drop mixture by tsp about 2 inches apart onto the cookie sheet. Place in a pre-heated 375F oven.
Bake for 20 – 25 min or until edges are lightly browned. Check cookies at the 20 min time to 25 min time frequently so as not to over-cook.
3. Remove cookies from cookie sheet and cool on a wire rack.
4. Optional: Dip bottoms of cookies in melted chocolate or drizzle the melted chocolate over tops.

These cookies are a big hit!
